April 27, 20218 Vegetables and Herbs for Beginning Gardeners
Are you thinking of starting a garden this year? Starting a garden can be a little overwhelming. But if you start with easy to grow vegetables and herbs, you can find success with very little work. We have found quite a few easy to grow vegetables and herbs but thought we would share the eight that are the easiest to grow.

Zucchini
It is very difficult to not grow zucchini in your garden. So much so, that you may want to limit how much you plant, because this vegetable can get out of control. This vegetable will require full sun. The seeds should be planted two weeks after your last frost. Once your plants are producing, you should harvest the zucchini when they are about a foot long. We recommend having a larger garden plot if you are planting zucchini, because the vines take up a lot of room and they spread.
Cherry Tomatoes
You cannot goof up growing cherry tomatoes. When you plant cherry tomato plants, you must place them in a sunny space. Trellises can be helpful for the growing vines, but these are also excellent container plants.
Kale
Low maintenance plants are far and few between, but kale is the one many gardeners choose. Seeds for kale should be planted two weeks before the last frost if you want a summer harvest. While this vegetable loves lots of sun, shade is necessary in the afternoon if you live in a very hot area. There are different types of kale available and each one does better in certain climates. Therefore, you will want to purchase the seeds for the kale that will grow the best in your area.
Chives
Chives are an herb that tastes fabulous on almost anything. These herbs are pricey in stores, but you can easily grow them in your garden. While you can plant chives directly in the ground, containers work well for this herb too. Since chives are perennials, it can take a couple years for them to reach their full height. But after they do, the chives will continue growing for years.
Mint
Mint should always be planted in a container, because the leaves can quickly overcome any other outdoor space. It is difficult to kill this plant, so a long summer vacation is not out of the question when you decide to add mint to your garden.
Snap Peas
There is nothing better than eating snap peas directly off the vine, which is why so many gardeners are ecstatic when they learn these vegetables are easy to grow. The seeds must be planted at least four weeks before your last frost. As the plants begin to grow, you will want to add trellises, because these plants grow vertically. We recommend using a pea inoculant, which is a powder, to ensure this vegetable grows in your garden this year.
Basil
Basil is one of the most popular herbs for cooking. While you can easily find it in the store, going out to your garden to get some fresh basil for dinner is a wonderful thing. Basil should be planted when the nights stay warmer. You must prune this herb plant regularly to encourage continuous growth.
Garlic
Garlic takes some time to grow in a garden, but it is super easy to do. All you need to do is plant some garlic cloves later in the fall. Once the garlic is planted, you leave it alone until it is time to harvest it the following summer.
These are eight vegetables and herbs that are easy for beginning gardeners. If you have never planted a garden before, you will find success when you choose any of these items. While you can grow all of these, you may decide to do a few of these and a couple others that might bring you a challenge this summer.
